Casa Chimayo is a lovely little establishment seen on Diners, Drive-Ins and Dives that is the actual neighborhood of the Chefs childhood. That's right, it's been converted in to the current Casa Chimayo restaurant serving some of the exact things he grew up with in his home. The one thing on the menu at Casa Chimayo which you have to dig in to is the tasty Chicken Enchiladas. All the sauces, cheeses, chile, chicken and more and made from scratch, in-house and as fresh as possible. The vibrant fun environment here truly makes the ensure experience memorable and as strong aspect we look forward to. Santa Fe has plenty of Mexican style restaurants but none really comes close as this one does. Opened up back in 2011, they are well in to their way of their second decade of operations and continue to grow in popularity and success. Few other favorites you should try here include their Margaritas, Duck Confit, Coconut Flan for dessert, Elote, Enchiladas, Fajitas and more.
